Reading A Food Label

On a UK label, fat is usually listed in grams per 100 g and sometimes per serving. Saturates are shown as part of the total fat figure, not an extra amount to add. If a label says 12 g fat and 4 g saturates, the energy from total fat is based on 12 g, not 16 g. The saturates line is still nutritionally important, but it is already included in total fat. When checking a portion, use the serving weight you actually ate rather than the suggested serving if they differ.

For recipe batches, calculate the total fat in the whole recipe and divide by the number of portions actually served. A cake cut into 10 slices has more fat energy per slice than the same cake cut into 12 slices. For frying oil, do not assume all oil in the pan is eaten. A recipe note should say whether oil left in the pan was measured, discarded or included. Portion Checks For Oils, Spreads And Sauces

Fat entries often look small until the portion is weighed. A level tablespoon of oil can be close to a full 10 g to 14 g depending on the oil and how it is poured.
